Hunger as a Vital Sign: Linking Food Security to Health Outcomes

In the United States, roughly 48 million people, about 1 in 7 households, experience food insecurity, adding an estimated $53 billion annually to medical bills. While hospitals are increasingly screening patients for hunger, current systems often fail to connect patients with sustained support and track outcomes.

Food insecurity negatively impacts health, leading to higher rates of chronic disease, impaired immune response, and longer hospital stays. Trauma patients facing food insecurity experience threefold higher rates of post-operative complications and significantly extended hospitalizations.

Currently, referrals to food banks are often one-off events with no follow-up to confirm assistance. USA Health in Alabama partnered with Feeding the Gulf Coast and Watershed Health to create a closed-loop system.

This model automatically connects identified at-risk patients to resources and tracks the delivery of support within the patient’s medical chart. The innovation lies in measuring successful interventions, tracking changes in hospital days, complications, and readmissions, rather than simply documenting referrals. This approach aims to integrate addressing hunger into standard healthcare workflows, treating it with the same rigor as traditional vital signs.
